The Macbook Pro Unibody has a x86-64 processor. You can install either the i686 (32-bit) or x86-64 (64-bit) ISO. Since this model is expandable to 6 GB of RAM, be sure that you use 64-bit if you have more than 4 GB of RAM. Otherwise, you may find 32-bit simpler.
